Since it's impossible to do camping trips right now, I wanted to share one of the simple joys we have on our trips: Orange Camp Cake. I love making my food from scratch on trips. It adds to the adventure, it's much cheaper, and it's lighter to carry.
Orange Camp Cake is perfect for kayak camping. It has no milk, butter, or eggs, so you can pack the ingredients and make it at your campsite in about 30 minutes. It’s the perfect indulgence after a full day of paddling.
Ingredients
First mix the dry ingredients into whatever container you brought — at camp it might be a ziplock or a bowl; here I used a mixing bowl.
1 1/2 cups all-purpose flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
Make a few little divots in the dry mixture and add your wet ingredients:
1 tsp white vinegar
5 tbsp vegetable oil
1 cup water
1 1/2 tsp pure vanilla extract
Mix it like a polaroid picture.
Prepare the Oranges
Cut the tops off two navel oranges and spoon them out. This takes a little work, but be sure to enjoy the orangey goodness while you do it.
Pour the batter into each orange until they’re about 2/3 full and cover the tops with foil.
Cooking
Place the foil-wrapped oranges on your MSR stove for about 30 minutes.
The Result
And voilà — these are unbelievably good and packed with flavour.
